1 envelope Italian salad dressing mix
1 loaf Italian bread cut into 16 slices, toasted
or 1 pizza crust cut into 8 wedges
1 pkg. salad greens
1 cup sliced tomatoes
pepperoni or salami slices
mozzarella cheese, shredded
sliced mushrooms
Directions:
Prepare salad dressing mix as directed on package . Brush 1 tablespoon dressing on each bread slice or pizza wedge. Place greens and tomatoes in bowl. Toss lightly with remaining dressing. Spoon greens mixture over 2 bread slices or 1 pizza wedge for each serving. Top with desired toppings. Serves: 8
Mexican Chicken & Rice
Ingredients:
4 boneless skinless chicken breast halves
1 cup salsa
1 cup chicken broth
2 cups Minute Rice, uncooked
1 cup cheddar cheese, shredded
Directions:
Bring chicken, salsa and broth to boil in large skillet; cover. Simmer 10 minutes. Return to boil. Stir in rice. Sprinkle with cheese; cover. Cook on low heat 5 minutes. Serves: 4
Easy Chicken and Potatoes
Ingredients:
2 lb. bone-in chicken breasts or thighs
1 lb. potatoes, cut into wedges
1/2 cup Italian dressing
1 tablespoon Italian seasoning
1/2 cup parmesan cheese, grated
Directions:
Heat oven to 400°F. Place chicken breasts and potatoes in 13x9-inch baking pan. Pour Italian dressing over chicken and potatoes. Sprinkle evenly with Italian seasoning and parmesan cheese. Bake for 1 hour or until chicken is cooked through. Serves: 4
Crunchy Bacon Coleslaw
Ingredients:
3/4 cup Miracle Whip dressing
1 tablespoon sugar
4 cups green cabbage, shredded
1 cup red cabbage, shredded
1/2 cup chopped peanuts
4 slices bacon crisply cooked, crumbled
Directions:
Mix dressing and sugar in large bowl. Add remaining ingredients; mix lightly. Refrigerate. Serves: 10
BBQ Bacon Burritos
Ingredients:
14 slices center cut bacon, cut into 1-inch pieces
3/4 lb. lean ground beef
2/3 cup chopped onion
1/2 cup catsup
1/4 cup hickory smoke barbecue sauce
1 can pork and beans
10 flour tortillas (8 inch)*
*Or use 12 hamburger buns, split
Directions:
Cook bacon until crisp; drain and set aside. Brown meat in same skillet on medium heat. Add onion, catsup and barbecue sauce. Reduce heat; simmer 4 minutes. Stir in bacon and pork and beans; heat through, stirring occasionally. Spoon mixture onto tortillas; fold burrito-style or serve in hamburger buns. Serves: 10
Easy Pasta Bake
Ingredients:
1 lb. ground beef
1 jar spaghetti sauce
1/2 cup grated Parmesan cheese
5 cups cooked pasta
1 pkg. mozzarella cheese, shredded
Directions:
Cook ground beef in skillet; drain. Stir in spaghetti sauce, parmesan cheese and cooked pasta. Spoon into 13x9-inch baking dish. Top with mozzarella cheese. Bake at 375°F for 20 minutes. Serves: 6
Garden Salad with Warm Bacon Vinigrette
Ingredients:
8 cups torn spinach or leaf lettuce
1 medium tomato, cut into 1/2-inch chunks
10 slices thick cut bacon, cut into quarters
1 medium onion, coarsely chopped
1/4 cup water
1/4 cup vinegar
2 tablespoon sugar
1/8 teaspoon pepper
Directions:
Place salad greens and tomatoes in large serving bowl; set aside. Cook and stir bacon and onion in large skillet on medium heat until bacon is crisp. Drain and add remaining ingredients to bacon and onions in skillet. Cook and stir on medium heat 3 minutes. Pour hot dressing over salad greens and toss. Serve immediately. Serves: 4
Stuffed Peppers
Ingredients:
1 lb. ground beef
1 large onion, chopped
1 can (15 oz.) tomato sauce, divided
1 1/4 cups water, divided
1 envelope garlic & herb salad dressing mix
1 cup Minute Rice, uncooked
4 large green peppers
Directions:
Brown meat and onion in large skillet on medium heat. Stir in 1 cup of the tomato sauce, 1 cup of the water and salad dressing mix. Bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 minutes. Cut tops off peppers; remove seeds. Mix remaining tomato sauce and water in bottom of 9-inch baking dish. Place peppers in baking dish. Spoon meat mixture into peppers; cover with foil. Bake at 400°F for 35 to 40 minutes or until peppers are tender. Spoon sauce over peppers before serving. Serves: 4
Easy Potato Bake
Ingredients:
1 pkg. frozen Southern-style hash brown potatoes
2 cups sour cream
2 cups cheddar cheese, shredded
1 can condensed cream of chicken soup
1 cup chopped green onion
1 cup corn flake crumbs
2 tablespoon butter or margarine, melted
Directions:
Mix potatoes, sour cream, cheese, soup and onions in large bowl. Spoon into greased 13x9-inch baking dish. Toss crumbs and butter; sprinkle over potato mixture. Bake at 375°F for 1 hour. Serves: 12
Brown meat; drain. Add onion; cook until tender. Stir in tomato sauce, 1/2 cup of the Parmesan cheese and spices; simmer 10 minutes. Prepare dinner as directed on package. Spread meat mixture onto bottom of 9-inch square baking dish. Top with dinner. Melt butter in saucepan on low heat. Blend in flour. Gradually add milk; cook, stirring constantly, on low heat until thickened. Stir small amount of hot mixture into eggs; return to hot mixture. Pour over dinner; sprinkle with remaining 1/4 cup Parmesan cheese. Bake at 350°F for 45 to 50 minutes or until golden brown. Serves: 6
